Cauliflower
Cauliflower is a cruciferous vegetable, along with cabbage, garden cress, broccoli and brussels sprouts cauliflower. A true superfood, cauliflower provides a high amount of nutrients in a low-calorie package.
A single cup of chopped raw cauliflower contains 77% of daily vitamin C requirements, 20% of vitamin K, 10% or more of daily vitamin B-6 and folate needs with smaller amounts of thiamin, riboflavin, niacin, pantothenic acid, calcium, iron, magnesium, phosphorus, potassium and manganese.
